Herb-Crusted Rack of Lamb

Ingredients

For the Lamb:

  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped

Instructions

  1. Prepare the Lamb:

    • Preheat your oven to 200°C (400°F).
    • Season the lamb generously with salt and pepper on both sides.
    • Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
    • Sear the lamb on all sides until golden brown (about 2-3 minutes per side). Remove and let it rest.
  2. Make the Herb Crust:

    • In a bowl, combine breadcrumbs, garlic, parsley, rosemary, thyme, olive oil, and a pinch of salt. Mix well until it resembles wet sand.
    • Spread Dijon mustard evenly over the top side of the lamb.
    • Press the herb mixture firmly onto the mustard-coated side of the lamb to create the crust.
  3. Roast the Lamb:

    • Place the crusted lamb on a baking tray lined with foil or parchment paper.
    • Roast in the preheated oven for 15-20 minutes for medium-rare, or longer for desired doneness. Use a meat thermometer to check: 60°C (140°F) for medium-rare, 70°C (160°F) for medium.
    • Remove from the oven and let the lamb rest for 10 minutes before slicing.
  4. Serve:

    • Slice the lamb between the ribs into individual chops.
