Ingredients
For the Lamb:
- 1 rack of lamb (approximately 8 ribs, French-trimmed)

- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh rosemary, finely chopped

- 2 tablespoons olive oil
Instructions
Prepare the Lamb:
- Preheat your oven to 200°C (400°F).
- Season the lamb generously with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
- Sear the lamb on all sides until golden brown (about 2-3 minutes per side). Remove and let it rest.
Make the Herb Crust:
- In a bowl, combine breadcrumbs, garlic, parsley, rosemary, thyme, olive oil, and a pinch of salt. Mix well until it resembles wet sand.
- Spread Dijon mustard evenly over the top side of the lamb.
- Press the herb mixture firmly onto the mustard-coated side of the lamb to create the crust.
Roast the Lamb:
- Place the crusted lamb on a baking tray lined with foil or parchment paper.
- Roast in the preheated oven for 15-20 minutes for medium-rare, or longer for desired doneness. Use a meat thermometer to check: 60°C (140°F) for medium-rare, 70°C (160°F) for medium.
- Remove from the oven and let the lamb rest for 10 minutes before slicing.

- Slice the lamb between the ribs into individual chops.
